SCRAMBLED EGG QUINOA AND KALE
This is a great dish served hot or saved and had cold with some lemon dressing.
What you will need.....
- 2 Eggs whisked in a bowl
- 2 Cups of cooked quinoa
- 1 tbsp Coconut Oil
- 1 Cup of Kale washed and still wet
- 1/4 Lemon
- Salt and Pepper
Heat half the oil in a pan and add the Kale.
Stir until wilted, then remove and set aside.
Heat the remaining Oil in the pan, add the eggs and start to stir/scramble.
Once nearly cooked through, add the cooked quinoa and kale for another minute.
Add Salt and Pepper and Serve with lemon on the side.
