CHILLI BEAN PRAWN DELIGHT

Theres nothing better than a warm dish of prawns to share with friends....or to eat all on your own! Haha
What you will need.......

  • 2 cups of Berlotti Beans (freshly cooked is best but a tin will also do)
  • 1 Chilli chopped finely
  • 3 large Garlic Cloves crushed
  • 3 tbsp of Coconut Oil
  • 1/2 Cup of chopped Parsley
  • 20 Raw Prawns peeled (I like to leave the heads and tails on)
  • 1/4 Bag of Rocket
  • 1/2 Lemon

Heat the oil in a pan, add the garlic, chilli until fragrant.  
Add the beans, parsley and prawns until the prawns are cooked through.  
Serve on a Bed of Rocket with Lemon slices.
Should serve 3-4 people.   (Delicious with a crusty loaf of Organic Seeded sourdough Bread)
